Situated on the slopes of the sleepiest volcano in Antigua, Guatemala, Josué Morales tends to finca, El Relampago. This 2-hectare farm grows almost wild coffee with intentional angels of light and shade in the rich, volcanic soil. After the four month long harvest, the coffee cherries are transported to the nearby mill, Beneficio La Esperanza, for meticulous processing and patio drying. The uniqueness of this coffee is described by the farm owners, Los Volcanes, as “lighting in a bottle." This lot of bourbon is cultivated at about 1,600 meters above sea level, under the shade of grevillea and avocado trees. Grown with care and attention to detail, this uniquely sweet and chocolatey coffee results in a well-structured and approachable cup.
