Coffee Description

Eber Olivera Baltazar's coffees are the perfect showcase for the beautiful Sierra Norte region in Oaxaca. His mastery of new and experimental fermentation processes as well as traditional coffee production methods, secure Eber's place among the elites of his craft. This specific coffee lot underwent a 50 hour extended fermentation process that results in deep fruity flavors.

The Story

Located in one of the most biodiverse areas of Oaxaca, Talea de Castro is nestled in Sierra Norte, an hour drive from the state capital. Here, Eber Olivera Baltazar perfects his agro-ecological techniques that has helped him create a name for himself throughout the region. While his award winning coffees are usually featured closer to home, he granted us the honor of showcasing his prized Gesha separation lot for our devoted customers. His unique approach to post-harvest processing and drying lends a distinguished complexity to this coffee. Following his dedicated harvesting protocols, Eber employed an extended fermentation process, a total of 50 hours, before the seeds were washed and dried. The result is truly a pleasure - bursting with flavor, complexity and profile clarity. It is a joy to showcase this coffee in our Special Selection series.
