Kamwangi is one of three factories run by Ngariama Cooperative Society. Established in 1983, the Kamwangi factory serves over 1,500 members. These cooperative members are smallholder farmers and typically produce enough cherry for just a few bags. After picking, the member farmers bring ripe cherry to the factory for further processing. The processing here is sometimes referred to as the 72 hour process, a triple ferment process where the third stage utilizes fresh water to remove any lingering fruit. Kamwangi uses a disc pulper with three sets of discs to remove the skin and fruit from the inner parchment layer that is protecting the green coffee bean. After pulping, the coffee is fermented overnight to break down the sugars, where it is cleaned, soaked and spread out on the raised drying tables. Drying can take anywhere from 12-20 days and the length of time is dependent on climate, ambient temperature and processing volume.
