In the western mountains of Honduras lies Santa Barbara, a region well-known for its coffee cultivation. Pablo Barrientos includes a combination of Bourbon and Pacas, two bean varieties commonly found on these hillsides. It is challenging to process coffee cherries in areas like these, which are close to the jungle and thus, to rain. The drying process, in particular, is especially demanding. But when these processes are precisely controlled, seemingly problematic factors are what make coffee from this area particularly interesting. The coffee produced here cups with flavor attributes not found anywhere else in Central America. Flavor notes of orange, ginger and toffee offer interest in this balanced cup. Pablo Barrientos is a very solid coffee offering from a small farmer lot.
