Santos Perez Ramirez has been a long time member of the ASDEFLOR association and has held numerous leadership positions over the years. Despite having access to the association’s mill, Santos chooses to process his own coffee utilizing his wet mill on his farm. Access to a private wet mill allows producers to experiment with processing and determine which methods contribute to high quality coffee. When processing coffee, Mr. Perez Ramirez first depulpes the coffee on the same day it is picked. He then washes the coffee clean of its flesh and fruit before leaving it to dry on a concrete patio for 5-6 days. Such speedy processing limits the amount of natural fermentation, leading to the squeaky clean and well defined flavor balance found in this coffee.
