Our final coffee from Guatemala for the season comes from producer Lazaro Constanza and his plot, Agua Dulce. Lazaro comes from a multi generational line of coffee producers and his plot was first acquired by his grandfather in 1975. After years gaining experience farming, Mr. Constanza transitioned the plot to focus on producing and processing high quality coffee.
Lazaro prefers to pick the cherries at full ripeness and trains his workers to ensure only ripe cherries make their way to the processing site. Once the cherries arrive for processing, they are dumped into a concrete tank and left to ferment for about 36 hours. After the cherry ferment, the coffee is stripped of its flesh and returned to a tank with fresh water to ferment for another 20 hours. Once fermentation is complete, the coffee makes its way through a series of channels for density sorting. Ideal soil and intentional farming practices contribute to the heightened vibrancy of this coffee and make this a perfect showcase for how delicious coffee from Guatemala can be.
