At the pinnacle of coffee quality in Colombia is Asorcafe, the producers association responsible for this beautiful coffee. Founded in 2004 with a modest 10 coffee growers, Asorcafe has become a leader in the region. In addition to churning out high quality coffee they provide aid to their members including education, job training and healthcare. There are 3 main villages in the Inza municipality, each composed of a handful of families growing on 20-30 hectares of land. Red Fox Coffee Merchants has had a long and fruitful relationship with Asorcafe since 2006 and will often buy from entire families or individual producers as volume allows.
Fabian Yugue’s coffee stood out to Roseline for it’s tart cherry-like acidity and extraordinary sweetness reminiscent of dates. This coffee is fully washed and fermented for 12-24hrs before drying for 12-20 days under parabolic cover. These parabolic covers act like a greenhouse - lightly heating and modifying the temperature of the drying room and protecting the coffee from the elements. The incredible consistency and controlled development of this particular lot has made it the most exciting new addition to our menu.
