The community of Santiago Atitlan produces this coffee in a rainy, mountainous part of the region Oaxaca. After harvest, the ripe cherries incur a dry fermentation period of a short 12-20 hours where the fruit is monitored and turned to ensure even-ness. Following a diligent washing process, the heavy rainfall makes for a slow and diligent drying process, taking 8-10 days on patio and petate mats. Production in Oaxaca is challenging for a multitude of reasons, including environmental, climactic and social perspectives - there are 16 distinct indigenous groups/cultures alone, many of which grow the coffee, including this unique Pluma variety we are excited to share with you. This clean, sweet, vibrant coffee is a beautiful example of the dedication to quality and process we are seeing from this region.
