Established in 1996, the Thiririka cooperative society is located in the township of Gatundu within the Kiganjo division of Kiambu County. It was named after the Thiririka river, the main body of water in the region. With just 2,400 members, the board is able to focus on quality and traceability.
After cherry sorting, a traditional depulper is used to remove cherry skins and flesh. Processing at the Githembe washing station is traditional: after a disc-depulper removes cherry pulp, clean water from the Theta river is used to move coffee to fermentation tanks and is then recirculated before going to deep pits that separate out contaminating solids. Due to security concerns, the coffee processed at Githembe is transferred to drying facilities at Kiganjo where they have sufficient drying beds to manage cherries processed at multiple mills.
